What Is Apple Cider Vinegar?
The vinegar prepared by fermenting apple juice is called apple cider vinegar. First, the apple juice is extracted and then by adding yeast to it, the fruit sugar is converted into alcohol. This process is called fermentation. The bacteria are then added to the alcohol which converts it into acetic acid.
Acetic acid and malic acid give the vinegar a sour taste and unique aroma. Its color varies from light yellow to orange. So, the vinegar that remains after fermentation is called Apple Cider Vinegar or ACV.
Most of the apple cider vinegar available in the market is filtered and pasteurized and bacteria are destroyed from it. This makes the apple cider vinegar last longer.
